In 2014, I pre-ordered the first run of Instant Pot DUO, and a new era began in my kitchen. At the time, oddly enough, I was just shopping for an appliance to sterilize substrate for growing my own oyster mushrooms (that’s a story for another day…) but I quickly realized that this multi-talented multi-cooker had a lot more to offer.
I’m a registered dietitian, culinary nutritionist, and designated Food Captain of my household. I believe that cooking is an essential practice for anyone who wants to eat foods that are optimally health-promoting, sustainably/ethically produced, affordable, and enjoyable. Since inviting this pressure cooker into my kitchen, I have come to rely on its glorious set-it-and-forget-it convenience for many of my whole-foods home-cooking needs.
