Pistachio Fro-Yo Pops

Calling all pistachio lovers! These perky pops are my new favorite summer treat. This simple recipe features none of the artificial flavors or colors that too often taint that old-school neon-green ice cream at the supermarket – just lightly sweetened whole-milk yogurt and plenty of roasted, salted pistachios.

Nuts and seeds are designed to fuel a baby plant through germination until they can develop enough roots and leaves to fend for themselves, which makes them very nutrient-dense foods. An ounce of roasted pistachios has about 6 grams of protein, 13 grams of fat, and 8 grams of carbohydrates (including 3 grams of fiber and 2 grams of natural sugars). Their biochemical profile supports antioxidant and anti-inflammatory activity, and clinical studies have demonstrated favorable effects on blood lipids, glycemic control and vascular function associated with pistachio consumption.

Eggnog Wedding Cookies

Yes, this holiday cookie recipe is a bit late to the party – but I’m sharing it today as my silly food-bloggy way of commemorating some new-life-news: believe it or not, I’m a married lady now! After 11 years together, Grant and I finally made it official over new year’s weekend and held a tiny elopement ceremony overlooking Seattle’s waterfront in a gondola aboard the Great Wheel. Love is magic – feels good, man!

The New Year is my favorite holiday, but there’s one sad thing about January: no more eggnog! If you’re a nog-lover like me, these cookies make a good antidote for the withdrawals.

Over the past week, Seattle has found itself in the middle of both a record-setting heat wave and a thick haze of smoke. Naturally, these conditions make me nostalgic for my days in southern California. (zing!)

In all seriousness though, I really have been doing some California Dreaming. With summertime in full swing, I’m craving sunshine and avocados, and generally feeling inspired by left coast vibes (the Cowabunga Lifestyle, you know?)

Steel-Cut Bircher Muesli

I’ve been charmed by overnight oats before, but until recently I had never tried what you might call the “original recipe” – bircher muesli. This dish was popularized in the late 1800s by Swiss physician Maximilian Bircher-Benner, who served it daily to the high-profile guests of his Alpine wellness retreat. The doctor’s intention behind this humble and wholesome “little mush” was to find a palatable way to get more raw fruit into his patients’ diets. Homeboy was driven by some puzzling proto-raw-foodism beliefs, but I’ll cut him some slack… You can’t blame the guy for living in what was essentially the dawn of nutrition science (people often forget that nutrition is such a young field; for perspective, realize thatΒ humans had no concept of vitamins until 1912). I have to give him credit for being ahead of his time in many ways, especially in making connections between health and harmony with nature. And, of course, for inventing my latest summertime breakfast obsession.

DIY Walnut Milk

When life gives you a windfall of walnuts… this is the way to handle it. A while back I was given 5 pounds (!!!) of walnuts. This is some pretty serious bulk for a household of two, and despite my best efforts at generously nutty yogurt/oatmeal toppings, we’ve been having a hard time putting a dent in the seemingly bottomless bag in our freezer.Β Until this revelation!

Drinking our walnuts has been a refreshing pleasure, and a simple way to take advantage of their antioxidant and anti-inflammatory benefits (they are the only nut with a significant amount of omega 3s!). It’s rich, creamy, and flavored like the pure essence of walnuts. You can drink it straight up, add to smoothies or pour over granola, but my personal favorite application is to use it as a base for hot cocoa. So unique and delicious!

While I’m proud of my Floridian heritage (ha), there’s no doubt that my heart belongs on the west coast. I’m completely in love with the food culture in my new California home. The most gorgeous produce is both cheap and plentiful. The bulk bins overfloweth with every healthy ingredient. It’s paradise for locavores.

Since we’ve already been talking about planning ahead for our meals, let’s convert all those good vibrations into a make-ahead breakfast fit for a California king!

Dark Chocolate Almond Spread

Let’s see if I’m totally out of line with this opinion, or if some of you can relate… I like theΒ idea of Nutella, but in practice it’s just too over-the-top unhealthy most of the time. The stuff is overwhelmingly sweet, slick with excess oil, and frankly… not real food. I’m not above a little candy here and there, but the problem is that a nutty chocolate spread doesn’tΒ need to be such a dietary disaster.

I had been wanting to experiment with a superior spread for a while, but I don’t have a food processor and I was wary of grinding up nuts in my blender. Luckily, Jeanine from Love and Lemons is smarter than me and recently shared a spread that circumvents this issue entirely by starting the recipe with almond butter. Duh!! I’m so thankful for the internet.

As a bonus, this is the kind of recipe I can even pass along to friends who aren’t into cooking. It’s extremely simple: Almond butter. Dark chocolate. Coconut oil. I took creative liberty and added an extra tablespoon of high-quality cocoa powder to really push the flavor, and you guys… it’s so much better than Nutella.

Morning Glory Muffins

So, I started working at a new job last week. A really dreamy job. The kind of job that makes all the years of college and grad school feel worthwhile, like life is finally coming together, and it just feels so good to be there! Over the weekend I channeled my excitement and set out to charm my new co-workers the best way I know: with baked goods. The thing is, most of my co-workers are dietitians… so I really had to bring my “A” game!

I wasn’t really familiar with Morning Glory muffins until recently, but I like the idea of a really busy treat loaded with a variety of healthy ingredients to keep things interesting. There are a million variations for add-ins; you could really use whatever nuts and dried fruit you have in the pantry, but I thought the traditional carrot shreds would be complimented nicely by dates, pecans and coconut. Some recipes include grated apple, which sounds good too, but I decided to replace it with crushed pineapple to further play on the carrot-cake flavors.

Super Greens Rice

It’s not every day that I stop to consider whether a side of brown rice should be made even healthier. Tell me, am I crazy? In my defense, my real intention was just to make our grains tastier. But when I decided to give them the pesto treatment, I couldn’t deny that I was upgrading the nutrition too. Instead of just a carby side, I ended up with a well-rounded, nutrient-dense food. A vehicle for healthy fats, leafy greens, and – obviously – more flavor! If it didn’t deliver in the flavor department, I hope you realize by now that I wouldn’t be telling you to make this.
